An omelette or omelet is simply an elegant, shapely form of a scrambled egg. It is quite common nowadays for an omelette to be folded around fillings such as cheese, vegetables, meat, or a combination of them all.

Of course, no one said breakfast had to be enjoyed only before 10 am. It's your breakfast wherever and whenever you want, and you should have no qualms about eating an omelet for lunch or dinner.

We are thrilled and eggs-ited to share our omelette recipe. Whether you're an early riser or prefer a midday dose of breakfast fare, this spicy af (🤭) omelet is one you can’t miss.

Super simple, vegetarian friendly and ready in less than 30 minutes, making it an EGGcellent way to start one's day.


  • 2 Tablespoon butter
  • 50g mushroom, sliced
  • 1 clove garlic
  • 8g bird eye chili
  • 30g capsicum
  • 3 medium eggs
  • 25g cheese
  • Salt & pepper


  1. In a frying pan, heat the butter and cook the mushrooms until soft and most of the liquid has evaporated. Add the garlic, capsicum, chili and season with salt and pepper. Cook for 2-3 minutes.
  2. Meanwhile, crack the eggs, give it a quick mix.
  3. Lower the heat, pour the eggs in the mushroom mixture. Cook softly and draw on the sides, allowing the uncooked egg to fall into gaps.
  4. Sprinkle over the cheese once the omelette is nearly set.
  5. Take your spatula and run it around the edge of your omelette to loosen it up a little.
  6. Gently fold a few times while tilting the pan up slightly. (I do mine 3 folds)
  7. Transfer it to your plate and sprinkle some herbs. Enjoy!
