Easy Scrambled Eggs With Mackerel

This is my another go-to healthy breakfast recipe. It takes about less than 10 minutes to complete. It's surprisingly tasty. It's satisfying, and it sticks with me throughout the morning. I don't get hungry after a couple of hours like I do with some other breakfast foods.

Eggs are a good source of protein, and I've always enjoyed them with vegetables. Try this recipe to start your day off right.


For the steamed broccoli

  • Water
  • 150g raw broccoli florets

Scrambled eggs

  • 1 tablespoon olive oil (or butter)
  • 2 medium eggs
  • 1 tablespoon double cream
  • 85g canned mackerel
  • Salt and pepper to taste


  1. Set the broccoli florets in a steamer basket over a pot with water. Bring the water to a boil, then cover and leave to steam for 4-5 minutes, or until the broccoli is tender.
  2. While broccoli is steaming, add the oil to the pan and heat between medium to high heat
  3. In a small bowl, break the eggs, add the cream. Beat the eggs for 30-60 seconds with a fork or whisk, making sure they are fully broken up and mixed well with the cream.
  4. Pour the egg mixture into the pan. Stir continuously, making sure to scrape the bottom of the pan. Keep stirring until it’s all cooked and fluffy.
  5. Transfer to a plate. Add the mackerel next to it.
  6. Broccoli should be done by now, remove from the steamer, transfer to the scrambled eggs and mackerel plate.
  7. Season the broccoli and scrambled eggs with salt and pepper. Enjoy!
