If you enjoy Greek cuisine, you'll enjoy this flavourful smoked lamb roast.

This roast lamb recipe's smoky flavour adds a delicious new dimension to the dish as well as a crisp crust.

Because of its rich, warming flavours, we love this dish when the nights start to get a little cooler and darker and we just want comfort food. The meat is melt-in-your-mouth tender and bursting with flavour, making for a truly satisfying meal.

Garnish platter with an assortment of salads or roasted or grilled vegetables for a colourful presentation.


  • 800g lamb leg, bone-in, fat trimmed
  • 1 tablespoon olive oil
  • 1 tablespoon fresh rosemary
  • 1 tablespoon fresh thyme leaves
  • 4 cloves garlic, minced
  • 1 teaspoon Dijon mustard
  • 1 teaspoon Himalayan salt
  • 1 teaspoon ground black pepper
  • 1 teaspoon coriander seeds, toasted and grounded
  • ½ teaspoon smoked paprika

For smoking

  • 1 tablespoon ghee
  • coals
  • big deep pan with a lid


  1. Preheat the oven to 180° Celsius.
  2. In a small bowl, combine rosemary, thyme, garlic, Dijon, salt, black pepper, coriander & paprika.
  3. Prick deep holes all over the lamb with a knife after patting it dry with paper towels. Massage the olive oil on the lamb. Followed by the spice mixture. Fill the holes evenly and thoroughly with it.
  4. Transfer the lamb in the prepared roasting pan and place into the preheated oven.
  5. Roast until it reaches an internal temperature of 135 degrees F, basting frequently, (about 1 hour 30 minutes to 1 hour 45 minutes) or until done to preference.
  6. Take the meat out of the oven, place it in your smoker and let it sit covered for about 15 minutes.
  7. Serve with roasted vegetable or a salad on the side.

Directions for DIY smoker

  • Light the coals. When it's ready, place it in the deep pan. Take the cooked meat and place it next to the coals (Make sure the meat does not come into contact with the hot coals). Place the ghee on top of the coals, then quickly cover with the lid to prevent the smoke from escaping. (let it sit for about 15 minutes)


Tips & alternatives

  • You can use a whole lamb leg if hosting a big party or use any preferred protein.
  • Preferred vegetables also can be roasted along with the meat.
