Avocado Smoked Salmon with Poached Eggs

A slightly different keto friendly take on poached eggs on toast, this breakfast is extremely quick and easy to make.

This awesome and super simple keto breakfast recipe is nutritionist designed with a view to providing a good balance of healthy carbs and protein. A great keto breakfast to start anyone’s day.


  • 1 tablespoon apple cider vinegar
  • Pink Himalayan salt
  • 2 cups green leafy salad (e.g. rocket, kale, spinach)
  • 1 lemon
  • 100g smoked salmon
  • 1 Hass avocado
  • 4 large eggs
  • Freshly ground black pepper to taste


  1. Equally divide the greens and add to 2 small plates, squeezing a of lemon juice onto each.
  2. Divide the smoked salmon and lay on top of the greens.
  3. Cut the avocado in half lengthwise, then remove the pit and skin. Cut into slices and place on top of the smoked salmon with another squeeze of lemon juice.
  4. To get the perfect poached eggs, boil about 2-3 inches of water in a pan add the apple cider vinegar and a dash of pink Himalayan salt.
  5. Bring to the boil, reduce heat to a simmer, then swirl the water with a ladle to create a vortex in the centre.
  6. Crack and egg into a small prep bowl then carefully slip it into the centre of the vortex.
  7. Repeat this for the remaining eggs.
  8. Poach for 2-3 minutes depending on how you like it, then carefully remove each egg with a slotted spoon.
  9. Remove any excess water then transfer each egg the top of the avocado and smoked salmon.
  10. Season with salt and pepper, and viola!
